What is the A.O.C. (A.C.O.) ?
The appellation of controlled origin is a "label" used to identify a product by it's origin.
The A.O.C. assumes :        · The reputation of the name.        · A certain type ; the organoleptic characteristics are original an recognised through time.        · An intimate bond with the produce of the region : this is the coordination of a group of strong and decisive interactions between the natural environment, the patrimony and the professional know how.
The rules of the A.O.C.
       · Produce in a limited geographical area.        · Respect the collective rules of production and development.        · Be subjected to professional supervision and public controls.
The collective disciplines of production and development.
Each A.O.C. is led and defended by an association which unites the different bodies involved in the fabrication of the product. These associations propose a list of rules and regulations with regards to the fabrication which the producers agree to respect, which are submitted to the I.N.A.O.
What does the A.O.C. bring ?
       · The definitif commitment of the name of a product coming from an area in which it was created.        · These "protected" names become therefore part of the inalienable heritage of our country.
